Smoked Fatty Wrapped in Bacon
Ingredients
- 3lbs Ground Hamburger
- 1lb Ground Sausage
- 3 Jalapeños Chopped Fine
- 2 Chopped White Onions
- 1lb Pepper jack cheese
- 1lb Shredded Mozzarella Cheese
- 1/2lb Bacon
- 7 diced Mushrooms
- 1 1/2 blocks Philadelphia cream cheese
Directions
Step 1
Saute onions, jalapenos, mushrooms, and cook bacon all together
Step 2
Mix in large mixing bowl with all cream cheese
Step 3
Mix hamburger and sausage together in a bowl thoroughly and put into 2 gallon bags and roll flat with a rolling pin
Step 4
Cut each side of the bag down the side and open
Step 5
Season with a thick layer of salt, pepper, garlic and montreal steak seasoning
Step 6
Take mixture of onions, cream cheese, etc. and put a layer about ¼ inch thick evenly over the whole square of meat mix – leave 1-2 inches of space on all sides
Step 7
Roll hamburger into a big burrito sized roll and wrap completely in bacon
Step 8
Smoke for two hours at 275F or until internal temp reaches 160F
