Tri Tip Tacos


  • 1 cube Butter
  • Cajun seasoning
  • Habanero Seasoning
  • 2 Limes
  • 1 large Yellow Onion


Step 1

Cut mixed peppers and onion into thin strips

Step 2

Mix onions and peppers thoroughly in a bowl

Step 3

Cut pineapple ½ inch thick rings

Step 4

Heat flat grill to medium high and melt on butter

Step 5

Put pineapple slices and pepper/onion mix onto flat grill on medium high

Step 6

Season mix with cajun and habanero seasoning

Step 7

Rub the Tri Tip with a little butter, oil, or bacon grease to bind seasoning to meat (optional)

Step 8

Season tri tip top side thoroughly (let it sit for half an hour)

Step 9

Flip tri tip over and season the other side (let it sit for half an hour)

Step 10

Heat smoker to 230F and cook for 1 hour (or until internal temperature reaches 110F)

Step 11

Heat smoker (or sear on a flat grill, cast iron pan) to 475F to sear the tri tip on each side and tell the internal temp is about 130. Let it rest for 10 minutes.

Step 12

Slice against the grain and enjoy!
